Hello,
Although the engine in my car is a '61 Chrysler 361, perhaps the carb adjustment is similar to the '59's...If I turn the mixture screw all the way clockwise until it seats, how many turns counter-clockwise do I turn it until I have a good mixture? (I have forgotten how to tune these engines!).

The screw you speak of is, in fact, the IDLE screw...the IDLE screw only affects the idle. Seat the screw, then turn it out 1 1/2 turns. Warm up the engine, and then back out the screw until the engine starts to bog down. Turn it back in a bit, and you're done.
Your troubles with acceleeration are related to vacuum advance and accelerator pump in carb. Look into it!
