I am getting rusty with this site's set up, but there certainly has been much mention thru the years regarding locating windshields, rubber gaskets, and all you mention.
I assume you are rebuilding a Sport Fury hardtop?
There is a fellow in Riverside or Highland, CA who sells new windshields for the 2HT. Be ready to spend $800-1000.His name is Timo Taskanen or something like that.
The rubber gaskets are available from Gary Goers in Kalispell, MT. www.Garygoers.com Buy his catalog or view it elsewhere on this site.
The brake bellows set up is available from Karp's, also locatedin California.
Try searching this site (59plymouth.net) for these vendors, or Google your desired items.

congratulations of finding those parts so quickly. I had no idea you were in NZ, not California. Yes, windshields for sedans are easier to find. and cost less than 2ht.
Let this Llist know where you sourced the rubber seal, and whether you are happy with the product.
There were two types of steering wheels in 1959...standard and Deluxe. The deluxe ones have clear sections and are difficult to find. The standard wheel is much more common...you might find one at Big M Automotive, again in California.

mine is a delux steering wheel and the top clear part has gone so thinking i might have it made up in resin and the have it leather wrapped
might not be original but probably cheaper than getting it redone
once i recieve the windshield seal ill let you know the quality

On the Deluxe steering wheel request, There is one or I think two companies (individuals) that can do the recasting of the clear acrylic part of the wheel.

I still have to do this too on my car, but decided to just run the standard wheel till all other points of my rectification of my 59 are done. Then I will have my recast too.

The dash pad can be done by Just Dash's in Van Nuys, California and it is around $600 dollars for that part alone. I was impressed on the quality of this part and for me, they color matched it to my Turquoise dash color.

But as Roger stated, a lot of your parts are on e bay and just have to keep looking and looking for them. I am on there every night, Looking for parts or parts that are better then what I have right now. The lower front Valance is a tough one to find. Mostly you will have a dented one that your body man will bring back to shape. I am sure John Fowlie at Big M Auto Salvage in Williams, CA will have one that needs repair that will give you a good starting point.

Nice looking car you have in Kiwi land! Glad to have you aboard the Forum and look forward to future posts from you.

PS, till you find that valance, take off the triangular support brackets that stabilize the missing front valance and it won't be so obvious that it is missing at the moment.
